Pepperoni Rolls from Chef Instructor Chris Bugher

Makes 8 rolls

Pepperoni Rolls

One of Bugher’s comfort food favorites, these rolls are popular in the region of West Virginia where Bugher grew up, which drew many Italian immigrants who came to work in the coal mines.

 

Ingredients

1 1/2 cup Whole milk, warmed to 110F
4 Tbsp Unsalted butter, melted
1 Tbsp Active dry yeast
1/3 cup Granulated sugar
1 1/4 tsp Salt
4 cups Bread flour
8 oz. Pepperoni
1 Tbsp Unsalted butter, melted to brush the tops after cooking
1/2 tsp Kosher salt, to sprinkle finished rolls

Directions:

  1. Mix together milk, 1T. sugar, and yeast.
  2. To a stand mixer add melted butter, remaining sugar, & salt
  3. Using a dough hook gradually add flour alternating with milk mixture.
  4. Mix until an elastic dough forms.
  5. Bulk ferment for 2 hours.
  6. Divide into 8 portions, roll into a ball and flatten.
  7. Place 1 oz. pepperoni on each dough portion and fold over into a roll, pinching to close.
  8. Proof 1 hr.
  9. Bake at 375F for 25-30 min.
  10. Brush with remaining butter and sprinkle with salt.

 

Spam Musubi from Chef Instructor Stephen Hertz

Makes: 7 Musubi Rolls

Spam Musabi

A play on sushi, Musubi is a Japanese snack that incorporates the sweetness of spam with the saltiness of seaweed and soy. This is one of Hertz’s all-time favorite snacks which he recently made for a Kikkoman soy recipe competition.

 

Ingredients

1 Can SPAM
2 Tbsp. Shoyu
2 Tbsp. Sugar in the Raw
1 Tbsp. Mirin
1 ½ cups Rice, Calrose
3 Sheets Yaki Nori

 

Directions:

  • Prepare the Rice following your rice cooker directions.
  • Slice SPAM into 7 pieces lengthwise, about ¼” Inch thick.
  • Place SPAM Slices into a preheated frying pan over medium heat and crisp both sides.
  • Drop the heat to low and add the Shoyu, Sugar, and Mirin
  • Cook SPAM in the sauce until the liquid has reduced and is thick and coats all sides.
  • Cut each Yaki Nori sheet into 2 or 3 pieces.

To Assemble the Musubi:

  1. Place nori on wax paper.
  2. Put the mold on the center of the nori strip.
  3. Fill ¾ of the mold with cooked rice
  4. Firmly press the rice down with cover.
  5. Push molded rice out by gently lifting the mold off
  6. Place prepared Spam onto the rice. (Add a little of the sauce too.)
  7. Fold nori over rice.
  8. Wrap musubi with wax paper or plastic wrap.
  9. Let set for 10 minutes.
